If this was a small rec league, the organizers might try to get makeup games for the teams that would have played the team later in the season. For example, if team Red quit while still having Blue, Green, Yellow and Purple on the schedule, the league might say, that Blue and Green will play each other, and Yellow and Purple will play each other. The trick will be to find a time that is mutually satisfying to the teams. If the team reorganizes and tries to come back in another year, the league may make them pay a performance bond to help ensure they don't quit again.
