When an injury occurs usaully a team will kick the ball out of play. It is then given back to the team by a throw in. Question - what action can a referee take if a team mate does not honor this practice and sweeps the ball up during the throw in with the intent to score?

There is absolutely nothing the referee can do to enforce this common display of courtesy. How to play the ball on a throw-in is up to the player taking the throw.

Nothing. Players either respect the tradition of Fair Play or they do not. The referee cannot require them to.

I sure hope it was a properly taken throw-in. If not we'll have to redo it. Otherwise, the team that takes advantage in such an unsporting way will end up losing in one way or another (not referring to scores).
