If the keeper punts the ball, and goes in the opponent goal without being touched by any other player. Does the goal count ?

Absolutely. This was not a restart - the ball was always in play. Only on some restarts are you prohibited from scoring for your team directly. Those restarts are throw-ins and indirect free kicks.

I have seen some small-sided youth rules that prohibit the goalkeeper from kicking the ball on the fly any farther than the half line. Check your local rules to see if this might apply.
